{Recipe} Zucchini Jalapeno Cookies with Lime Glaze

I know what you are thinking.  I do as I had the same thoughts you did when I first heard of this recipe.  How in the world do those ingredients go together?  But, trust me, they do!

I made these for a party once.  I didn’t tell anyone what was in these cookies and they all went!  When I told them what was in these, they were shocked!

Note:  When deseeding the jalapeño, wear gloves and make sure you wash your hands after!  Your eyes will thank you later.

  1. Combine dry ingredients in a bowl and whisk together. In the bowl of a stand mixer, cream together the butter and sugars until light and fluffy. Add the egg and vanilla, and beat until incorporated.
  2. Add the grated zucchini, chopped jalapeño, lime zest, and lime juice and mix on low until combined.
  3. Slowly add the dry ingredients with a mixer on low and beat until incorporated. Scrape down the bowl as needed.
  4. Refrigerate the dough for at least an hour.
  5. Preheat the oven to 375°F.
  6. Bake for 8-12 minutes until lightly browned. Allow the cookies to cool completely before drizzling with the glaze.
  7. Lime Glaze
  8. Start with 2 Tbsp. lime juice and whisk it into the powdered sugar and lime zest. Add ½ Tbsp. at a time until the desired consistency is reached. Glaze can be made very thick or thin as desired.
  9. Drizzle on cooled cookies.
