{Recipe} Zucchini Pizzas

Have you gone carb free?  (Shame on you!)  Do you miss pizza?  This zucchini recipe will satisfy those pizza cravings, and it is healthy to boot!  This recipe came to me at a great time as I usually have an overabundance of zucchini from my garden.  We gobbled these slices right up after I made them.  My husband was full of raves!

I am still trying to get my preschooler to eat green things.  I know she would love these if she would just give them a try!

I used homemade pizza sauce instead of marinara sauce, and I coarsely chopped the shredded cheese to fit on the slices better.  You can add your own toppings as you can fit, just make sure it’s smaller to fit the pieces.

Zucchini Pizzas
Prep: 5 minutes Cook: 10 minutes Serves: 4

  1. Spray or brush both sides of the zucchini rounds lightly with cooking spray or olive oil. Sprinkle with salt and pepper. Broil or grill the zucchini rounds.
  2. Place the cooked zucchini rounds on a large baking sheet. Top with small amounts of sauce, cheese, and pepperoni pieces, if desired. Sprinkle with Italian seasoning.
  3. Broil or an additional 1-2 minutes, or until cheese is melted. Be careful not to burn. Serve immediately.
